While each retreat follows a specific caloric guideline, our chef focuses on food quality, nutrient density and exciting flavors. Our menu is created to inspire and nourish, and will show you the impact that good quality food can have on your mood, energy and overall wellbeing. The focus is on local, organic produce, rich in all the right nutrients and free from gluten, dairy, and refined sugar. Menus can be modified in advance to accommodate food allergies and preferences to ensure your individual needs are met.
Breakfast - Coconut chia pudding with raspberry, cacao & tahini
Juice - Carrot, ginger, lemon, turmeric, cinnamon & black pepper
Lunch - Raw thai salad with a kelp noodle dashi
Dinner - Smoked artichoke & almond dip , a medley of fresh tomatoes and herbs with flax crackers & crudites followed by black bean, smoked paprika, fresh tomato and roasted garlic stew with cumin crisps, olives & saffron cashew yogurt
Breakfast - Quinoa granola with almonds,dehydrated stone fruits and ginger w/ cashew yogurt
Juice - Beetroot, lime, lemon, apple & chard
Lunch - Squash blossoms stuffed with macadamia ricotta, textures of courgette with a lemon & basil dressing
Dinner - Porcini crusted roast cauliflower w/ red pepper & pomegranate wild rice
